I’ve got to tell you all about these Pumpkin Muffins from Cooking Light I just made.
You can find the recipe online here and they came out so moist and flavorful! Don’t forget to add the sugar mixture on top like I almost did—it really adds a special crunch. Obviously, I highly recommend them!

When I saw Em’s green pancakes (made with spinach) on her blog last week, I was intrigued. I told her asked her to make them for me sometime. She happily obliged and made my mom and I a wonderful meal last night.
We started out with POM Wonderful mocktails.
Emily got the spinach ready for the pancakes.
Mom whipped up a few egg whites to put in the pancakes, also.
Here they are cooking up.
Emily also made Biz’s Crustless Broccoli Spinach Quiche. Wow, this was sooo scrumptious! I’ll be making this on my own again, I’m sure. You should try it, too!
The pancakes also turned out great. Emily and Mom said they could taste the spinach just a little, but I really couldn’t taste it at all. This would be a fun way to get kids to eat their greens.
We also had a lovely fruit salad on the side.

I agree with everyone else. The muffins look AMAZING! I will most definitely be trying them. Actually, I really want to try all of the recipes. It all looks so good!

The teacher I had back in high school that was given the most respect out of all of the students was an 81 year old woman (I kid you not). She had a backpack on wheels that would blink as she walked down the hall. She had to have been just under 5 feet. Ms. S really valued our opinions and respected us as individuals. I have never heard a student talk back to her. In fact, I’ve seen many guys hold doors for her as she would leave the building in the afternoon. She was quiet, short, and timid. So what! Break the stereotype!
I’ve only read a few of your posts. What age group are you hoping to teach?
Pumpkin muffins are my mom’s cheer me up snacks for my brothers and me. She puts lots and lots of chocolate chips in them too. Those pictures got me all nostalgic, girl!
I really need to try those pancakes. I think my boys would like them and I will be sneaking in a little veggies on them! Looks like the 3 of you had a nice visit! The eats look delicious!
