It feels so FREEING to be on Spring Break this week! I’ve done absolutely nothing today except rest and relax, and it feels so good ;) Tomorrow I’m actually going to school with my mom to observe a few teachers so I can see how short young quiet teachers can still be effective teachers. I’m excited about that, even though it means getting up early and packing lunch.
Here are a couple meals from last week. Above is barley pilaf with a mashed baked sweet potato and black beans mixed in. Oh, and I learned my lesson: If you want one cup of barley pilaf, DO NOT POUR IN A CUP DRY BARLEY! It made probably about 3 cups cooked barley. Lesson learned. At least it still tasted great.
I made this one with my mom. It’s just a simple Asian stir-fry. We made it with a pound of chicken, brown rice, and half a bag of frozen veggies. This was so so delicious. I could eat this every night (okay, I really couldn’t).

I’m really not creative haha! I just get ideas from other blogs most of the time.

Oh that barley with the SP and BB’s looks great!! :) Have fun with Mom tomorrow!! My biggest tip – be very hands on – ask the teacher you’re with if there’s any students you could work with one on one, file any papers for her, make any games, etc. That way you can help her out while still observing her out of the corner of your eye. And it’ll give you a good taste for what all teachers have to do.
I love barley, it’s tasty and so good for you. A few weeks ago I made a risotto with it (instead of arborio rice.) holy yum! :)
