Bunco was fun last night, and everyone seemed to love Mom’s Light Texas Caviar.
Light Texas Caviar
1 c. corn
1 can black beans
2 tbs. balsamic vinegar
3 tbs. lime juice
1/2 tsp. salt
1/2 tsp. cumin
1/2 c. cilantro
Mix all ingredients in a large bowl and let marinate a few hours before serving (overnight is best).

This morning I woke up and was craving some FIBER!
I made a smoothie using this Amazing Grass Berry flavor Greens SuperFood that I bought at Whole Foods with the gift card I won in the Stonyfield prize pack.
I was so excited to be able to buy this because it’s so expensive and something I really wouldn’t have been able to buy had I not had a gift card.

Tonight we had the most delicious dinner (full of fiber, too!).
Mom bought this salmon and baked it to perfection.
We also had baked sweet potatoes with a little sea salt.
And also Brussels sprouts with a little EVOO and sea salt.

I’m so sad that Spring Break is almost over, but my summer break will be here before I know it (hopefully)!

That smoothie looked refreshing this morning. I’m glad you enjoyed dinner. It was pretty good and very colorful! I LOVE sweet potatoes, but the best part was the salmon. It was sooooo good to get to eat some really good salmon!

Ohhhh brussels sprouts. I can seriously eat a whole container of those things.

I wouldn’t say they’re filling enough for a meal, but for a snack they do tide me over. Plus, they help me get my fruits and veggies in for the day!
I want to try Amazing grass so badly! I’m thinking about ordering it onlne, there’ sno whole foods where I live!
If you order more than 3+ containers online, you do save some money, but they’re still really expensive. If you’ve got the extra cash, though, I’d recommend it.

Mmm… everything looks delicious Jen! I’ve never had Salmon before.. the smell turns me off.. yours looks great though! I may just have to bite the bullet and try it sometime! lol!

As of January 4, 2010 I started WW and working out daily because of Jenn eats nutriously now! I have even tried foods I used to declare ucky. and love them!! Your brussel sprouts pictures are giving me the courage to try them again. They look so tasty! I have a mental roadblock when it comes to those veggies in particular, because I remember my mom making them as a kid (the microwave, frozen kind) and they smelled so gross that I couldn’t bear to even try them. How long did you roast them, and at what temperature? It’s all about the baby steps to change our relationship with food… past memories and the associations we have with food can be a real hindrance but I’m learning!
