Hey Everyone! Happy Cinco de Mayo!
Breakfast: Mini bagel with peanut butter and a cut up banana.
Look who wanted to come outside with me. She’s contemplating stepping outside here.
Lunch: I used up the last of the chicken and a cup of whole wheat pasta with an ounce of pesto. In case you didn’t figure this out by now, this is one of my favorite meals ever. I also made some ranch dressing with a ranch mix packet we had and 1-1/2 cups of Stonyfield Organic plain yogurt. This turned out really well, in my opinion. I dipped a cup of carrots and 1/2 a cup of cucumber in it. Yum!
Dinner: In celebration of Cinco de Mayo, I had open-faced fish tacos. I ended up eating 2 of these (mini corn tortilla, Greek yogurt instead of sour cream, wholly guacamole, onions, and a total of 4 oz. tilapia). The tilapia had just a little garlic seasoning on it and was oh-my-delicious!
Dessert: My smoothie tonight included 1 banana, 1 cup strawberries, 1 cup almond breeze, 1 tbs. flax seed meal, and some crushed ice. I really love these smoothies as the weather gets hotter and hotter. It was especially nice after a run. Oh, and I got that cup this afternoon at Target with a matching plate. I think it’s very Spring/Summer-y.
Exercise: Today I actually jogged 2 miles straight without stopping to walk! I was exhausted by the end of the two miles, but still need to do one more, so I just walked the third mile. It was a real challenge for me, but I was so proud of myself for doing it. Two months ago I couldn’t even do one mile, so this is a huge improvement!
