Hey guys, how was your Monday?
Breakfast: Mini whole wheat bagel, 1 egg with 1/4 c. feta cheese, and 1 sliced banana.
I went to the pool after breakfast to do some exercises, and met this creepy little lizard.
Isn’t is so weird looking?! I can tell it wanted me to take its picture, though, because it was posing for me!
Lunch: After the pool, I came back and really wanted something warm, since the water was so cold. I heated up some tomato soup on the stove, and sipped it while I made the rest of my lunch.
Lunch: To make this, I started out with 2 slices of light white bread (80 cal, 4 g fiber), and spread 1 wedge of laughing cow light cheese on each slice. Then I added 1 oz. of prosciutto, closed it up, and sprayed Parkay on the outside, and toasted both sides on the stove. It turned out just as I’d imagined– warm and creamy with some saltiness from the prosciutto–absolutely decadent (for this O positive girl!).
Dinner: My grandparents came up for dinner, and brought these pork chops. I was really not impressed, and didn’t really enjoy it. Unfortunately, I ate half of it before I realized I shouldn’t eat it if I’m not enjoying it, so I had about 1.5 oz. The corn bread was from my dad’s mom (the grandparents here are my mom’s parents), who is a great southern cook, and was absolutely delicious. Definitely worth it! My side of yellow corn was also amazing. I also had a salad, and some tea (caffien-free and sweetened with Splenda). Overall, it was a pretty good meal (although I must admit the cornbread was the best part).
Dessert: Watermelon and red grapes (yes, I finally got my red grapes!).
Exercise: Like I said, I went to the pool today. I spent 20 minutes in the freezing cold refreshingly cool water doing some water jogging and swimming, but mostly water jogging. It really felt good to get in the water, despite the unfavorable temperature. Afterward, I tried out some yoga, but only lasted about 10 minutes. Later, when my grandparents got here, we went for a walk around the neighborhood (which I just found out is 2.26 miles, not 2 miles).
