I’m happy to report that my ankle feels about 85% better today. It hasn’t been throbbing like it was yesterday, and it’s a whole lot less painful, but it still feels pretty tight. I stuck to doing 30 minutes of yoga, and 50 minutes of light walking for today. Hopefully I will still see some weight loss at the end of the week.
Breakfast was delicious and filling. I had a mini whole wheat bagel with an egg mixed with LC light cheese and a banana cut up on the side. This kept me full ’til lunch, just like I hoped!
Lunch was also delicious. I spread 2 tbs. hummus onto a whole wheat sandwich thin and added some chopped cucumber on top. I also had lots and lots of watermelon on the side. I just love watermelon!
I was wanting a snack, but wasn’t sure which type of chip I wanted, so I had both! This was 1/2 oz. sun chips and 1/2 oz. light cape cod chips.
Dinner was sort of made up. I mixed 1 can black beans, 1/2 c. water, 1/2 tbs. flour, 2 cloves minced garlic, and some chopped onion together in a skillet ’til it resembled re-fried beans. I then spread 1 tbs. Wholly Guacamole, 1/2 of the black bean mixture, and 3 oz. sliced steak on top of a whole wheat tortilla. This was really yummy.
After my workout, I was craving a smoothie. Here’s what I used: 1 c. Original Almond Breeze, 1 tbs. flax meal, 1 banana, and 3/4 c. frozen blueberries.
I loved the color that this came out to be– so pretty! This was one of my favorite combos so far, because the frozen blueberries made it super cold without having annoying chunks of ice. You can bet you’ll be seeing this combo again soon!
