We made our first batch of fresh pesto this afternoon! Honestly, nothing comes close to fresh homemade basil pesto. It’s just the best. I’m working on a post to show the process and recipe we use, so keep an eye out for that if you want to make pesto but aren’t sure how.
Look familiar? I really must end my grits-for-breakfast streak by tomorrow! But they’re just so good with the LC cheese.
While I was photographing the grits, Beaux spied something to chase. He looks so funny to me when he goes after things.
For lunch, I had mashed black beans on a La Tortilla wrap (yes, Emily, we finally found some!) with cucumber. I also had some of these really good red grapes on the side.
Dinner may sound kind of strange, but it was delicious and filling. Bowl: 1 c. whole wheat pasta + 1/2 c. spaghetti sauce + 1 tbs. pesto + 1 c. steamed spinach + 1 c. broccoli. I’m slowly getting more and more used to adding broccoli into my meals.
