Hi guys, I hope you had a great Tuesday. I got home pretty late last night after babysitting, and went right to bed (yeah, I’m kind of an old lady), so here’s my food and fitness from yesterday…
I had one of my new favorite light breakfasts– yellow grits with 2 wedges LC cheese. My aunt suggested this combo to me (Hi, Aunt Melissa!), and it really does make the grits creamy and yummy without adding a ton of fat.
I told you you’d be seeing the red beans and rice soon! This made a great lunch to much on while I baked (oops! I was guilty of multitasking!). What did I bake, you may ask?
Well, I made these scrumptious HG (Hungry Girl) Apple Fritters. This is another recipe from HG’s 200 Under 200 book (Lisa Lillien really should love me for all the promos I give her!).
The recipe is supposed to make 12, but there was enough leftover batter to make one fritter minus the apple. I enjoyed this before anyone noticed ;)
I was babysitting that night, and didn’t have anything for dinner (Mom tricked me into thinking I’d be able to eat before I left), so Dad came to the rescue with a grilled chicken sandwich from Steak ‘n’ Shake.
