I don’t know if any dads read my blog (speak up if you are one!), but I hope all the dads out there had a great day! Emily and Andrew were very sweet to come over and celebrate with us.
I also wanted to thank you all for your good advice and well-wishes before my 5K, and the congratulations after. You really have no idea how much your support means to me and inspires me to keep on going!
I woke up early to go to church, only to find that my car was missing. Apparently there was some mix-up and my dad thought I wasn’t going to church, when I really was planning on it. Anyway, for breakfast I had some yellow grits with 2 wedges LC cheese.
Sorry the picture is blurry– I have to have the camera on “easy mode” in order for it to focus correctly. Anyway, here’s my salad with lunch which had lots of lettuce and cucumber, with about a tbs. of yogurt blue cheese dressing on top.
The main part of the meal was this delicious eggplant Parmesan that my mom made. Unfortunately, my mouth was soar from something, so the acid from the tomato sauce was hurting my mouth and I only ate about half.
I also had a piece of delicious toasted bread dipped in EVOO.
And for dessert– more bread. zucchini bread to be exact (a cooking light recipe I think– my sister made it). This was very yummy. Thanks, Emily!
Since we had a bigger lunch than normal, we ate dinner kind of late. I got a smoked turkey something-or-other. Oh my goodness, it was good! It came with cheesy rice on the side, which was also amazing, but I gave half away since I knew it had to have been at least 400 calories for that little bowl!
It was a really nice lazy Sunday just visiting with family. I hope you all had a great day, too!
