Friday was the day before the race. I spent the morning putting clothes away and packing for the night and the race.
Breakfast was nice and simple. I had a sandwich thin with butter and a banana.
Lunch was delightful (I’m trying to expand my use of adverbs).
Some family friends came over, and my mom had made a lovely luncheon spread. I ate some healthified chicken salad, healthified pasta salad, fruit salad, and carrots with hummus. My favorite was the pasta salad, which was made with plain Greek yogurt.
For our dessert, we had some blueberry cream pie ice cream, with fresh blueberries on top.
Usually, we go out for Italian for dinner before the race to carb-load, but we opted for Chinese this year.
I started out with a bowl of won ton soup. This restaurant serves the best won ton soup I’ve had, so I always like to get it when we eat there.
The main course consisted of some brown rice and some beef lo mein.
Then we made our way to the hotel. We traditionally stay at in town near the start of the race, so that we don’t have to worry about driving and parking the morning of the race. I loved our view.
The bed in our room was gorgeous.
But this is where I slept…the pull-out couch ;)
We walked to Phipps Plaza to watch some fireworks, and then came back and enjoyed some Belgian chocolate and Cooking Light cookies.
I love out 3rd and 4th of July traditions, and hope we continue them for years to come!
