Today was another yucky rainy day, but I didn’t let that get my down.
Since I’d been out of LC cheese for the past several days, I was excited to use it this morning.
I made a 1/4 c. yellow grits (1 serving) and stirred in 2 wedges LC cheese until it was nice and creamy. It was better than I’d remembered!
After breakfast, Mom and I did the walk/jog 2.5-mile DVD (30 mins.) together. It feels so good to sweat in the morning!
And then the rain started pouring down. I guess the plants enjoyed it. I sure didn’t.
Then my sister came with some gifts for us!! I was excited to see what all the hype over TJ’s almond butter was.
Now I can start trying out some yoga. It’s Emily’s favorite yoga DVD, so it must be good! The other DVD was Leslie Sansone’s Four Fast Miles, which I was so excited to try out, as you’ll see in a minute. And she brought us two types of Trader Joe’s Almond Butter to try :)
Lunch was obviously pasta with pesto and chicken. I cut it down to 1 tbs. pesto because our supply is getting low. I only had about 2 bites of that potato salad in the picture before I remembered that I don’t like dill. Oh well.
A couple hours later, it was time to try the AB. I tried a tbs. of each kind. I can’t decide which one I liked better. I think I’d like a salted crunchy one? I liked the crunch, but I also like the added salt. It’s a toss-up!
And then…you guessed it… it rained again.
Dinner made up for the rainy day, though. I was in the mood for something warm and creamy, and that’s what I got!
Dad made an old family favorite– Poppy Seed Chicken. Although I just realized he left off the poppy seeds haha! Oh well, the poppy seeds are really not important to the casserole. I actually like it better without them. (I just asked my dad and he said he didn’t forget, we just didn’t have any.)
Next, after a little digestion time, I was very excited to try my new 4-mile walk/jog DVD (50 mins.) out. It’s always fun to have a BIG assortment of Leslie Sansone’s DVDs. I just love her and her workouts. And this was my favorite of hers that I’ve done thus far. Yes, I did two WATP DVDs in one day, but they’re just perfect for a rainy day.
After all that walking/jogging, I was ready for a nice BIG smoothie! I used a whole cup of blueberries tonight, and kept the rest the same as last night.

I definitely think these weekly goals are very helpful to keep me on track. 3 days down, 11 to go ’til my vacation!
Overall, it was a really good day. I think Morgan and I are gonna do something tomorrow. Maybe just go on a walk or something. (Morgan, if you’re reading this, I’ve missed you and I hope you cheer up soon!)
