HAPPY BIRTHDAY, GRANDMA!
Sorry I didn’t post last night. I really have no excuse, except that I just kind of lost track of time, and then got too tired. Not a big deal… here’s a recap :)
LC cheese yellow grits. I tried to make the picture a little more interesting.
Tri-colored pasta with pesto, a tbs. of flax, and some leftover salmon my grandma sent me home with.
I was craving some crispy veggies for a snack and grabbed some cucumber and carrots with hummus.
More red beans and rice for dinner. Hasn’t gotten old yet!
Then I was craving something sweet for dessert. I had some of these cookies and was surprised at how good they were.
More LC cheesy yellow grits. It’s just such a comforting meal to wake up to for me.
Yes, another repeat. Sorry this post is kind of boring. I’ve been eating all leftovers since my parents are out of town and left me with a fridge full of leftovers. This is pasta with pesto and a tbs. of flax. I was a little scared to try the flax in the pasta, but I really liked what it added to it. It gave it a whole new dimension of nutty flavor.
On the side I had a nice big bowl of watermelon.
My grandma came over for dinner and to do some swimming with me. Since it was her birthday, I told her to choose where we went, and she chose Ruby Tuesday. I ordered the herb crusted tilapia with broccoli and brown rice pilaf. I’ve had some bad experiences with Ruby Tuesday, so I was a little worried, but this was really good.
I hate to say it because it makes me sounds pretty lame, but I’m really ready for my parents to get back tomorrow. It gets lonely fast in a big house with your only companions being 3 cats and a fish. Even though I’ve been staying busy during the day with friends and the pool and stuff, the nights get kind of boring and lonely and quiet. One night alone is enough for me! [Let’s see if I’m singing the same tune after spending 4 nights in a hotel room with my parents and my sister next week ;) ]
