I almost skipped the Shred today because time got away from me, but I did it. Day 8 is done! I’m writing this much later than normal because Mom and I went shopping for some back-to-school clothes, which pushed dinner back. But here I am now!
Breakfast consisted of a banana and AB. I forgot to take a picture, so here’s one that may look familiar:
At lunchtime, I was really craving a grilled cheese with tomato soup. Can you believe I used to be convince I hated tomato soup, and now I crave it? Anyway, we didn’t have any tomato soup, so I opted for cream of chicken.
It’s not the healthiest meal ever, but hey, it’s a Sunday! ;)
While I was searching in our pantry for tomato soup, I came across this brownie mix that Mom has been hiding from me.
I promptly baked them up and served it over ice cream. Delish! Only problem is now that they’ve cooled down, they’ve gotten hard. But that first one right out of the oven was amazing.
I lounged around a little, watched some Golden Girls, and just enjoyed my last lazy Sunday before school starts back.
Mom was also sweet and took me shopping at Kohl’s. They were having a great sale (but when is Kohl’s ever not having a sale?!), and I got a few shirts and a pair of shorts for school. One week from now and I’ll be moved into my first apartment! Okay, that makes it sound better than it really is. It’s a school apartment. But still. It’s a step.
After shopping and picking up dinner for my parents, I came back and started on my dinner.
I decided to use these mini rice cakes I picked up yesterday to make a stir fry.
I thought the stats were pretty good for these. I forgot to get a picture of the ingredient list, but I know there were only 3 things, and I believe they were just rice, salt, and water.
I was going to take step-by-step pictures for y’all, but I was just rushing to get it done because I was so hungry.
I started with one large chicken breast, chopped it up, and cooked it in the iron skillet in a little EVOO. Then, I removed the chicken from the skillet. I chopped up a bunch of onion, celery, and carrot. Then I poured a little chicken stock in the skillet, added a little soy sauce, a spoonful of brown sugar, and sprinkled a good amount of garlic powder in. I sautéed the veggies in that for a few minutes, then added the mini rice cakes. Once that all seemed cooked enough, I added back the chicken. Pretty easy!
Honestly, it turned out better than I thought. I think this is the first thing I’ve ever cooked without a recipe other than stuff like grilled cheese and pasta haha. I will definitely have to get some more of these little rice cakes. They just taste like little dumplings or something. Obviously, I highly recommend them!
And since I sang myself praises for that little meal, I’ll now tell you about something I tried that didn’t turn out so well. I did the Shred after dinner, and then I was wanting a little protein, but not hungry since I’d only eaten dinner about 45 minutes before. So then I thought maybe I could make some chocolate milk. I heated a cup of Almond Breeze on the stovetop and added one milk chocolate square and one dark chocolate square.
Well, I think it probably would have been okay if I’d left it hot, but I just wanted something cold, and I think the ice just kind of ruined it.
At least I had it in my cute mug from St. Thomas. I ended up dumping the last little bit in the sink.
So my dad is driving with me (and maybe Morgan, if she wants!) to Trader Joe’s one day this week to get some almond butter and just look around. Do any of you TJ’s fans out there have anything I just have to try? I really can’t get much, but it should be fun just looking, right? Maybe? Oh, if only money grew on trees!
