Well… I decided to challenge myself to go vegetarian for a week. I’m really just wanting to see if I can go without meat for a week. My dad was born and raised in southern Georgia, so he pretty much wants meat at every meal. Since we always ate meals together growing up (and we still do when I’m home), my mom always cooked meat at every meal. So I’m pretty reliant on meat as a means to feel full.
However, I don’t really like the fact that I need meat at most meals to feel full, so I’m trying to change that. In an effort to change my way of thinking about meat, I thought it would be a fun little experiment to see if I could go without meat for one whole week.
Today was my first day, and I must say I’ve sort of felt hungry all day. That being said, I probably could have made different food choices, but I have a very limited supply of foods. Buying and cooking for one person is really not as easy as I thought—and it’s only my first day!
I didn’t get pictures of my breakfast or lunch, because they were both just quick and on the run, but here is what I made for dinner:
I made a quick stir fry with udon noodles (not sure if you’re supposed to use them for stir fry, but it worked), onion, and carrots. The sauce was made with rice vinegar, soy sauce, brown sugar, honey, and garlic powder. I ate half of this because it made a lot.
And I drank a diet ginger ale that I got from Trader Joe’s.
I was pretty hungry later, so I had a vanilla Greek yogurt from Trader Joe’s with some TJ’s granola on the side. Maybe it was because I was so hungry, but this was seriously heavenly. I could have eaten about 3 of these!
I woke up this morning to the sound of loud chanting.
This was not the most pleasant way to wake up.
I had a mini bagel with Sunbutter and a banana on the side. This was the first time I’d tried Sunbutter (it was a free sample I sent off for a while ago), and I was pleasantly surprised. You can definitely tell it’s made from sunflower seeds, which is nice. I really loved the flavor and texture, and may even buy a jar if I see it in the store.
For lunch, I was eyeing the chicken burgers I got from TJ’s, then I came back to reality and remembered I wasn’t eating meat. I settled on these:
Soy nuggets. Again, I was pleasantly surprised by how good these were. The texture was a little iffy, so if you are picky about textures you may not like these, but they had a really nice flavor. I ate them with a LC wedge, and a side of grapes.
I got the junior size of the vegetarian burrito. I think I must have had a bad experience with a burrito when I was younger, because I’ve been to scared to eat one for the longest time until today. It had black beans, Mexican rice, cheese, guacamole, and lettuce. I loved it. I also ate the chips dipped in pico de gallo (the green salsa was too spicy for me).
One of my room mates has a birthday coming up on Tuesday, and she celebrated with her family today. She brought back these delicious cup cakes, and was sweet enough to let me have one.
I decided to take some pictures of what my room looked like this morning, so I can do sort of a before and after. I already had most of it set up, but I’m hoping to get a few more things up such as wall decorations and curtains.
Here’s my doorway, which I think I’ll just keep plain. Not sure why, but I just have a feeling it should stay white and plain.
This is my “desk,” which is more like a shelf. My sister painted the pink bowl for me, and I painted the pitcher and little cup. I love how they match the placemats. (Am I weird for putting placemats on the desk? I just like how they look! They make it more homey.)
This is my “medicine cabinet” area ;) Oh, and the food scale.
I forgot hangers, so I just had these folded up until my parents brought me some hangers from home.
My bed without my bill pillow. I love how my bed is next to the window. I’ve always wanted a window seat, so this is pretty close!
I had my apron that Morgan gave me for my birthday last year temporarily hung up because the walls were so sad and boring.
And that page from a magazine is covering up this ugly “do no touch unless your dying” button. Also, I had my produce all stashed on the shelf, because I forgot I would need a basket for it.
I decided to bring up a little fridge even though we have one in the kitchen just for little things.
And the boring closet doors. I’ve got a full-length mirror on one of them now.
And…that’s pretty much it! It’s a really small room, but I honestly love it so far. Can’t wait to show you the pictures once everything is done, which may be a few weeks.
