My classes went well today. I have a 3-hour block of an Education classes in the morning, then I have a short break for lunch, and then Spanish II. So it was a little long, but I got through it.
For breakfast, I took a mini bagel and one of my Sunbutter samples to my morning class to eat during our 10-minute break (yes, they’re nice enough to give us a bathroom break since the class lasts 3 hours). I didn’t want my classmates to think I was too weird, so I skipped the picture. I’m sure you can use your imagination ;)
Since I only had a short lunch break, I opted for leftovers.
I had some of the leftover TJ’s rice pilaf and black beans, with cucumber slices. I also had a smoothie on the side, which contained 2 kiwis, 1 c. Almond Breeze, a banana, 1 tbs. ground flax, and a handful of blueberries.
Then I was off to Spanish. I think this will be my hardest class this semester. I just don’t have a knack for learning foreign languages. The professor seems nice, though.
After Spanish, it started lightly raining. I figured I could get back to my room before it started pouring, but I guess I just walk too slowly. I heard a big clap of thunder, and it immediately started pouring down rain. I was slipping in my flip flops, and had to take them off, but the pavement was hurting my feet. I was also getting soaked on one side of my body, because I was trying to protect my purse ;) So I finally got inside the building, and decided to be lazy and take the elevator. I got to my floor, then all my change fell out of my coin purse. The door shut before I could get out, and immediately went back to the bottom floor :(
When I finally made it back to my apartment, I was starving, but it was too early for dinner. I somehow got myself to wait ‘til a more appropriate hour, and then began to make TJ’s whole wheat pasta with Parmesan, garlic, and sweet potato.
First, I got the ww pasta cooking. Then I chopped up a sweet potato and sautéed it in a little Olive Oil and lots of garlic.
I’m a little embarrassed to admit I was thinking up this meal pretty much all day long, and was so happy that it turned out as well as I’d imagined.
Not even missing the meat!
When I went out to get the Parmesan for this meal, I also redeemed the ice cream Weight Watchers gave me. I decided to go for a flavor I wouldn’t normally choose.
C and I went to a campus ministry worship service tonight. We walked to it, and it was about 20 minutes there and 20 minutes back. When I got back, I was looking forward to trying out the ice cream.
I honestly really liked it. If you like toffee, you will probably like this bar. I loved that there were little toffee pieces in the chocolate coating. My only complaint is that they’re pretty small. I wanted more!
Tomorrow I don’t have class, but my dad is coming up to bring me some things from home (he’s sweet like that, most of the time!). I hope you all have a great Thursday. Not long now ‘til the weekend!
