To get back into my carnivore ways (did you read my reflections post from earlier?), I made this stir fry with lots of veggies and chicken with lo mein noodles.
This was actually a frozen meal, and had surprisingly good nutrition stats and was surprisingly delicious. Loved the crispy snow peas.
Then I packed up everything in my car (along with lots of food supplies—including ingredients to make the cookies) and headed back up to my beloved mountains. I really could not be luckier to go to school in such a beautiful place.
When I got up to my room, my key wasn’t working :-( Once the guy at the front desk got it working again, I was ready to make the cookies I wrote about above.
I followed the recipe exactly except I used whole wheat flour since that was what I had here. I ate two, and I must say I highly recommend trying this recipe. My room mate, C, just tried them and said they were really good, too. I didn’t tell her they were relatively healthy ;-)
