Now you all should know I love my Beaux, but he’s not the easiest cat to get a cute picture of. Bless his little heart, he fits the saying “a face only a mother could love,” but when I saw him laying on the chairs under the dining room table yesterday, I just thought he looked so cute.
Yes, I sure did miss him (even though he could care less that I’m home!).
I’d been craving waffles all week, so we agreed we should have a Saturday brunch.
I had 1 large waffle with syrup, a scrambled egg with feta cheese, and 2 pieces of turkey bacon.
A little later, we headed to the Super H Mart to get some produce. Of course, I had the samples, although there really weren’t many that day.
Dinner started out not-so-great (long story), but ended up perfect.
I had some whole grain couscous topped with sautéed chicken.
And some delicious yellow squash.
We’re heading up to my grandma’s today to visit with family during this long weekend, so Mom asked me to bake some cookies to share.
Can you tell I love this recipe?
I used all-purpose flour this time (what the recipe calls for), and the recipe really is better with that, rather than whole wheat flour.
Of course, I had to try one. I wouldn’t want to feed my family bad cookies!
I found it interesting that a lot of you commented on my last post that you need more than 8 hours of sleep to really feel your best. Sometimes I feel that way, too. It’s good to know that’s not just me!
I’ve been multi-tasking while writing this post and cooking lunch. Time to eat! Bye guys, I’ll see you later!
