I think it’s the same for pretty much every family—family gatherings mean lots of food. Luckily there were lots of healthy options yesterday.
Before I show you what I had for dinner, here’s what I made for lunch yesterday.
Everything was baked/roasted, which was not the best decision for a hot day with the a/c off.
Firm tofu marinated in honey, soy sauce, rice vinegar, brown sugar, and garlic powder, then backed at 400* for about 20 minutes (flipped halfway through).
Asparagus with a little EVOO and kosher salt and roasted at 325* for about 20 minutes.
Butternut squash fries with kosher salt baked at 400* for about 20 minutes (flipped halfway through).
After lunch, we went on our way to my grandparents’ house to celebrate Labor Day and my Grandpap’s birthday.
It was nice seeing everyone.
Em was there, of course.
Before dinner was served, I had some raw veggies with hummus.
Here’s my plate. I had some juicy cantaloupe, delicious baked beans, a deviled egg, some tasty Mexican-style pasta salad my aunt brought, and an Amy’s veggie burger on a sandwich thin with a LC wedge.
I ate about half the burger, and finished everything else. I wanted to go back for more pasta salad because it was so good, but decided if I wasn’t hungry enough to finish the burger, I shouldn’t eat anything else.
Then we sang Happy Birthday and had cake. I didn’t actually have any cake, but had 2 of my cookies I’d made the night before.
There was also my Grandma’s homemade peach pie, but I was too full to have any, so I took a slice to go that I may either eat tonight or some day this week. I heard it tasted as good as it looked, so I’m looking forward to it!
I’m headed out to another cookout now, so I’ve gotta go. I hope you’re having a fabulous Labor Day.
