Hi guys! Can you believe the week’s almost coming to a close already? It seems like it’s gone by so fast!
This morning I was in the mood for pancakes.
I used my TJ’s whole wheat pancake mix. They turned out really well; I think I’m getting better at making them.
A chopped banana on the side.
And a tiny bit of agave nectar on the side for dipping.
After breakfast, I did a little cleaning around the apartment. I mopped the kitchen floor, and vacuumed the common area, as well as my room and the bathroom areas. I also washed some dishes.
For lunch, I heated up some leftovers from the other night.
Dinner was a bit of an experiment that, luckily, turned out well.
I steamed some veggies, cooked up some rice cakes, and then topped it with a peanut sauce. I used yellow squash, onion, and asparagus.
Peanut Sauce
2 tbs. peanut butter
2 tbs. soy sauce
3 cloves chopped garlic
1/4 c. water
1 tbs. brown sugar
I had some garlic toast on the side. I am so pleased by how this turned out. I loved the peanut sauce, and the veggies and rice cakes went so well together.
For dessert, I used the last of the vanilla yogurt I had in the fridge (about 1/4 cup?) and my last Oatmeal-Banana Chocolate Chip Cookie crumbled up.

I’m not sure if I’ve mentioned before that I’m majoring in Middle School Education. This is only my first semester in the program, and tomorrow we’re going to our first middle school to observe.
I’m a tad nervous, but mostly excited. After so many years of going to school, I’m finally beginning to see the light at the end of the tunnel. The bad news: the alarm clock will be going off before 6 AM. I don’t believe I’ve had to get up that early since high school! But I know it’ll be worth it, and I’m so excited!
I’m going to go get my shower and get in my PJ’s so I get go to bed as soon as Project Runway is over. Have a great Friday!!

Totally lovely looking pancakes!!! I want some, I keep seeing them on tons of health blogs this week. I try to stay away from them but I know in moderation and if I have whole-wheat/grain ones they aren’t so bad so I may splurge this weekend. =) Laura

I love middle school! I used to teach at a middle/high school and middle schoolers are quite a bunch. They are so full of energy and angst. A wonderful mix. They always kept me on my toes.
