I’m feeling so much better about my diet today. I ate well and even made it to the gym. I just need to do that consistently. Consistency is key!
For lunch, I cooked some lobster ravioli, and topped half with marinara sauce and half with pesto.
Absolutely delicious. I did have 5 more ravioli, but that just made it one full serving.
After digesting, I went to the gym. I did 25 minutes on the stat. bike and 25 minutes on the elliptical. The walk to the gym and back takes just under 20 minutes.
After my workout, I wanted to try out a sample Amazing Grass sent me to try.
I thought this Pomegranate Mango Amazing Meal would go nicely with the papaya chunks from TJ’s. I blended it up with a cup of Almond Breeze.
The results were not very pretty, but isn’t the Amazing Grass cup so cute?!
I was surprised by the flavor. It was pleasantly fruity, and not “grassy” at all.
The only thing I didn’t like was it turned out somewhat chalky. Maybe I just need to add more liquid?
After doing some homework, I started on my dinner. I made sort of a macaroni casserole with broccoli and cauliflower.
I loved how this turned out, and it was a very filling meal.
Time to get back to school work!
