I’ve had such a lovely weekend with less computer time. I usually try not to get online too much during the weekend, which is why I skip out on blogging sometimes. However, it’s Sunday night, and I’m back! I’m so excited about this week because it’s only a 3-day week!!
Here are a few foods I enjoyed over the weekend.
Since I had to get up so early Friday morning, I made an smoothie with this Original Blend Amazing Grass the night before. I added a banana, 1 c. blueberries, and Almond Breeze.
This one wasn’t chalky like the other two, maybe because it sat over night? It took a couple sips to get used to, but I ended up liking this. I would buy one of the flavored ones over this, though.
Friday night I wanted to bake some pumpkin bread to welcome FALL. I used this recipe, but substituted this Palm Sugar Navitas Naturals sent me to try out instead of sugar, and whole wheat flour instead of white.
It turned out well. The palm sugar sweetened it perfectly—not too sweet. Palm Sugar can be substituted 1:1 for white sugar, and is lower on the Glycemic Index. I love it whenever I can “healthify” a recipe.
I’ve been craving fish all weekend, so when my parents came up today they treated me to some tilapia. I had it over whole wheat pasta with an EVOO garlic sauce, and it was delicious. Thanks Mom & Dad!!!
My dinner tonight included an ooey gooey crack wrap.
And a banana.
Perfect way to end the weekend.
I’m afraid I may be getting a cold. My head has been hurting since yesterday morning, and I’ve had the sniffles all day. Let’s hope it’s nothing, though!
