I’ve got patterns on the brain after my math class this afternoon. I’m basically in an elementary math class, which is sort of strange to me, since I’ll be teaching middle school. Anyway… I did lots of cooking and baking after class (well it was a lot for me, anyway).
If it seems like I’m making lots of the recipes from Cook Yourself Thin Faster, it’s because I went through and marked a bunch of the recipes from the book and bought the ingredients for them this past weekend. Today I decided I wanted a meatless day, and this is what I came up with.
Sweet Potato Gratin
I also heated up some black beans and green beans to round out the meal.
The sweet potatoes turned out really well. Although the took over an hour to bake, it was worth the wait (though I’m not sure how it made it into a cook book of fast recipes?).
Brown Butter Cobbler
I’d also been wanting to try out the Brown Butter Cobbler, which has blueberries and peaches in it.
I messed up a little with the order of the layers, so it probably doesn’t look as pretty as it should. Let me just tell you, though, this tasted way better than I’d imagined, and it was really easy. I never would have thought I could make a cobbler!
