Yes, it’s me again. Just in time for the holidays, things are getting back to “normal” for me. I hope to be writing regularly again; it’s kind of hard to get back into the swing of things after such a long break.

Today was a rainy and generally “blah” day, so I was in need of some comfort food. I decided to make Poppy Seed Chicken, minus the poppy seeds (sorry Morgan!).

I paired my portion with some rice and veggies. This was a perfectly comforting meal.

This week, I’ll be slowing getting back into the groove of not only blogging, but eating better. I haven’t been on my best behavior eating-wise these past two weeks, so I really need to get back on track. Here are a couple meals from the past two weeks that were splurges.

Morgan’s mom insisted upon taking us to experience the greatness that is Willy’s Mexicana Grill. She also insisted that sharing one burrito would not be enough for two people, so we should also order the nachos. Boy was she wrong! I don’t think we finished half of either before we were completely stuffed.

There’s a little Italian restaurant near my college that I just found out has whole wheat pizzas that are fabulous. I  ordered mine with pesto and Italian sausage. It’s a personal sized pizza, but very filling and I could only eat half. So so yummy!

While it’s okay to indulge sometimes, I could never eat like this consistently. I’m ready to get back to my healthy eating!

Hey guys, how have you all been? I’ve had so much yummy food over the fall break!

Thursday night dinner consisted of chicken, yellow squash, rice, and broccoli.

Then I made these delicious oatmeal bars. My mom got the recipe from a friend.

Chewy Oat Bars

3 tablespoons margarine or butter (I used Smart Balance)
1/2 cup brown sugar
1 tablespoon honey
1 1/2 cup quick cooking oats
1/8 tsp. salt
1 tsp. cinnamon
2 tbsp. ground flax seed
Preheat oven to 375*F and spray or grease your pan. Cream margarine and sugar. Add honey, oats, salt, and cinnamon. Spread mixture evenly in pan. Bake for 17 minutes. While the bars are still warm use a knife or pizza cutter to cut into bars. Allow to cool before you serve.

These are my new obsession. The recipe only made 6, so I made more last night and added sliced almonds this time.

Friday, Mom took me to Trader Joe’s. She had her fall break, too, and so we decided to have a fun day and go out for lunch. We settled on lunch at Which Witch, a lovely little sandwich shop that has over 50 different warm sandwich options.

I got the chicken pesto sandwich with provolone cheese, lettuce, caramelized onions, and tomato. This is most definitely in the top 10 best sandwiches of my life.

After TJ’s, we also picked up this MaraNatha Organic No Stir Peanut Butter that I got a coupon for. I tried a little on a banana, and loved it. It’s so creamy and has an amazing flavor.

Friday night, I went over to Morgan’s house and we made pizza with Trader Joe’s whole wheat pizza crust.

I won a contest from Applegate Farms a couple weeks ago, and they sent a few discount coupons along with the prize. So I got some Applegate Farms Ham while at TJ’s.

I made a toasted ham and cheese sammie on a sandwich thin.
